The title says it all.
So can you change the HUD on AoS and how do you do it. (specifically version 0.76.)
Can you change the HUD on Ace Of Spades?

Well, you can change stuff like the health, ammo, block and nade icons. Maybe you can change the minimap player icon but I'm not sure if that works.

So is there a way to make the HUD look like it does on 0.75 on 0.76?

Yes, just replace the HUD stuff from the .76 PNG folder with the HUD from the .75 PNG folder.

But what I'm wondering is what folder do you copy it from and into?

From the folder named PNG in the AoS .75 directory into the folder named PNG in the AoS .76 directory.

That only changes the actual graphics, as opposed to the layout.
You cannot do that without a mod. And by a mod, I don't mean a kv6/png/wav pack, which is technically a "skin".
Maybe learn_more could allow this in modloader, but I advise that you don't annoy the shit out of him.
