Also is it worth paying £20 less? and just going with 8GB RAM (2x4GB). Or keep going with the current plan of 16GB (2x8GB)

Except using maya really grinds my ram, uses like 3.5 GB

For video editing and rendering it is highly recommended to have atleast 8 GB.
