I couldn't find an area more appropriate for it, so here I am. What falls under griefing?

I mean, wantonly destroying your own team's stuff, sure. That much is obvious. But, on the 'Bridge' map I was severing the outwards paths so my team could safely forget about defending underneath and instead push up on the main bridge. Does this constitute griefing regardless, or are strategic removals the exception to the rule?

Remember, on a lot of servers at least, you're dealing with 12-year-olds who probably aren't getting enough attention at home and who designate themselves as some sort of griefer police without really having any idea what they are doing. Somebody yelled at them once for griefing their cahir and now they are going to whine about everyone they perceive as doing what they did, whether they are right or not.

You seem to have the right idea, though. I'm a big fan of strategic griefing. Clearing lanes of fire of those pesky trees to create an optimal killzone is part of the game. But, then again, so is charging into battle only to look over your shoulder to see the rest of your teammates gleefully removing all possible cover from the spawnzone and placing your CP tent high on an inaccessible pillar.
