How would I quickly set up a peer-to-peer server for my friends?

Tell us all about your server! Where is it located? Who's in charge? What are the rules? Game modes? Maps?

Yeah, I'm pretty sure that it's possible. Just set up the server as usual and then get your friends to connect to your Hamachi IPV4 (for example, aos://00.00.00.00), and you should be good to go.
